During the long winter months, many of us have been waiting for the warmer temperatures of Spring to arrive. The rebirth of nature as it wakes from the long winter freeze. This is the time of the year, a spring hike through the woods of New England now holds the potential for many more pleasures and if you’re a forager, you look forward to the opportunity to get out and harvest some of the many spring delicacies.

Fiddle-head pickin can be described in many terms, but the one I use is my spring ritual. Each spring, not long after the snow melts and depending on where you live, they start emerging. You can find them on the banks of rivers, streams, and brooks throughout the northeastern United States. Depending on where you live, they can start emerging in mid-April, May, and in the North country, early June.

Fiddle heads are the young, coiled fronds of the ostrich fern. Nearly all ferns have Fiddle heads, but the ostrich ferns are the edible tasty ones. They are usually available for about three weeks and where I live, the pickin usually starts during the second or third week of April.  Just before the bugs are a problem in the woods. It’s now when the clock starts ticking, as the ferns first growth of the year is starting to push its way up through the forest floor. The opportunity to harvest them will only last a few weeks before all the ferns have uncurled.

It's at this moment, just before they uncurl that it’s time to harvest them. Ostrich fern Fiddle heads are about an inch in diameter, they can be identified by the brown papery scale-like covering on the uncoiled fern, and the deep” U”-shaped groove on the inside of the fern stem.

To prep the Fiddle heads, remove the “silk” from the fiddlehead. The silk is a thin, brown, papery covering that resembles a peanut casing. The best way I have found to do this is place a couple dozen at a time in a brown paper bag and shake them vigorously. Next step is to rub the remaining brown casing off with your fingers in a bath of cold ice water. If needed, drain the water and then rinse them again in a bowl of cold water, gently agitating them with your fingers and pouring off the water until it is free of particles. Drain well and pat dry.

It is recommended that you cook them for at least 12 and up to 15 minutes before you eat them. Fiddle head ferns contain a toxin that causes stomach pain in humans when ingested. The toxin is destroyed by the heat generated during the cooking process.

These springtime delicacies have a taste reminiscent of asparagus. If you cook the Fiddle head like an asparagus, you really can’t go wrong. Their flavor is mild; they are pleasantly crunchy.  They can be cooked in many different ways, from steamed, to boiled, or dipped in a batter and fried. I like them sauteed in olive oil and butter, with some garlic and lemon juice, lightly sprinkled with salt and pepper. There are many recipes to be found on the internet so if you go foraging, pick a bunch of them, give them a good wash and they will freeze very well. 

I love to pickle them and use them throughout the year in a Pasta Salad. If you have never tried canning them before and want to give it a try, no garden crops needed. Just head out to the store and buy a case of canning jars for about ten dollars. You will also need a good set of tongs to remove the jars from the boiling water pot during the water bath canning method.

According to police, John Panicci has been arrested and accused of stealing encrypted access key, and computer equipment at the local elections office. The theft occurred on March 19, when the Elections Office conducted a training session for volunteers assisting with a special election that was scheduled for March 24th.
