At the request of a few friends and some Emails, Here is my rib recipe;  from the rub, BBQ Sauce and the Brine. I do like to brine my ribs before they ever get to the smoker. I started doing it this way after successfully using it on whole chicken.

I have always been happy with these results and don’t really change anything when I prepare them, except how many beers are consumed during the cooking process. There is not much heat to this recipe so if that's what you like you'll need to increase the heat elements.  It's not mainstream, but it's good and I hope you enjoy it.



 Rib Rub  Ingredients
1-1/2 tablespoon Smokey paprika powder

1-1/2 tablespoons garlic powder
1-1/2 tablespoons onion powder
1-1/2 tablespoons Lawry’s seasoning salt
1 tablespoon black pepper
1-1/2 tablespoon coffee rub (plantation)

3 teaspoons Mrs. Dash original blend salt free seasoning
3 teaspoons coriander powder
1-1/2 tablespoons unsweetened coco powder
4-1/2 tablespoons brown sugar
1-1/2 teaspoons dried sage
3/4 teaspoon nutmeg  

In a bowl combine the ingredients and shake well to mix. This will make enough for 3 racks of ribs.

 Cola BBQ Sauce Ingredients
1 cup cola 
1 cup ketchup
1/3 cup cider vinegar
1/4 cup honey
1 TBS Worcester sauce
1 TBS Orange Marmalade
1 TBS dark molasses,
1/2  TBS  paprika
1/2 teaspoon smoked chipotle powder
1/4 teaspoon crushed red pepper flake                                                                                                       1/8 teaspoon cayenne pepper flake
1-1/2 teaspoons lime juice
1/4 teaspoon cardamom powder 
1 teaspoon dry mustard powder
1 teaspoon ginger powder
1 teaspoon coffee rub
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon seasoning salt

Combine all ingredients in a medium heavy-bottomed saucepan, stirring until smooth. Bring to boil over medium heat, stirring occasionally. Reduce heat to low and simmer until reduced about 45 minutes. Strain then cool, Transfer to a glass container and refrigerate. Best when made 2 days before use. Yield: about 2 cups

Brine for Ribs  

Take 1 gal of water and add 2 Tbs. of salt and sugar, add 6 sprigs of Rosemary, 2 oranges juiced and add the peel, 1 each lemon and lime juiced and add the peel, ½ tablespoon crushed ginger, 1 tablespoon each of fennel seed, thyme and coriander. Bring to boil then let cool to room temp. Add Ribs and Brine in fridge for 12 hrs, pat dry; rub ribs, let sit for 2 hrs and cook.

Smoker Directions....Preheat to 250 degrees.

The 3-2-1 method   

(3 hours in smoker, 2 hours in foil, 1 hour setting the glaze). Place the ribs in the smoker, bone side down on the opposite side of the coals, place wet apple wood on the coals for the first two hours of the cook time, also every thirty minutes, the ribs get spritzed with apple juice while they cook.

After three hours the ribs are removed from the grill, spritz them with apple juice and wrap them up in foil, place them back on the smoker, bone side down, for another two hours.

After two hours, the foil is removed from the ribs, brush with BBQ sauce and placed back on the grill bone side down for another thirty minutes.  After thirty minutes brush the ribs one more time and wait for the last thirty minutes of cooking. They are ready.

Tonight, there is a bit of euphoria in the house with the win by Germany over Argentina for the World Cup title.  It was a great game and with the one goal by Mario Goetze in extra time to give Germany a 1-0 victory, I can safely say that “alles gut heute abend in mein haus” or, when the Frau is  happy,     I am happy.

The World Cup reaches its conclusion when Germany and Argentina go head-to-head in Rio de Janeiro today. The munchies at our house are ready in the fridge and the Ribs will be heading to the smoker very shortly.  Then it’s just a waiting game till game time at 3pm. Helene is the real soccer fan in the house, so for her, today is as big as it gets for sports.
 
Germany, last claimed the title in 1990 in a 1-0 win against Argentina - and the German fans are desperately hoping for a repeat of that outcome today. I do believe that today’s game will be a very good game because Argentina has
yet to surrender a goal in the knockout stage and boasts one of the world's best players in Lionel Messi. Have a good one today.

The heavens will deliver a rare treat for the moonstruck romantics, werewolves, freaks and the rest of us that just really love this stuff later this week. The third Super moon of the year will take place this Saturday. For those of us in the Eastern time zone, the moon turns full at 1:25 a.m. on July 12 the instant the moon lies most opposite from the sun for the month. However, the moon will look full for a few nights because of its size.

A Super moon is defined as one of the closest approach's the moon will make to the Earth on its elliptical orbit. They do not happen that often during a full moon and these are the ones that you'll want to make sure you get outside to enjoy how awesome it will look in the sky.  Maybe you will get a chance to hear the werewolves howling.

This occurrence will result in the largest visual size moon when observed from Earth. It will be 14% larger and 30% brighter than most full moons. Fortunately, there are two more Super moons that will occur during a full moon period remaining in 2014. One will occur on August 10th and the other one will happen on September the 8th.  The Supermoon in August is projected to be the largest one in 2014.

Each week on Friday, The Highland Street Foundation will sponsor free admission to Museums and other cultural and fun destinations throughout Massachusetts. This program is open again this year to all Ma. residents thanks to this very generous family foundation.


Jacobs Pillow Dance Inside/Out Performances Wednesday-Saturday Stockbridge Ma

These are the free performances that happen every week from Wednesday through Saturday during the Jacobs Pillow Dance Festival. The shows are performed outside, with a beautiful backdrop of the Berkshire Hills in the summer. When the weather is threatening the performance will move to an indoor studio with very limited seating. Call the Box Office after 5pm the day of the performance to find out if it will be outdoors or indoors.

Waterfire                                                                 Providence RI  Saturday at Sunset

This Saturday, there will be another full lighting for the Waterfire Festival. Over eighty bonfires will be lit along the river in downtown Providence. As you walk along the paths in Waterfront Park, past the arched bridges and beautiful sculptures; your senses will be captivated by the flames, aromas of burning wood and music from around the world. There will be torch-lit vessels that travel down the river, street performers and live music.  WaterFire has been enjoyed by of over ten million visitors since its flames were first lit in 1994.

This concert series, presents more than 200 free performances throughout the Greater Boston area from May through September. Bringing neighborhoods alive with free programs of pop, rock, jazz, Latin, and more, some of Berklee’s most promising young artists are poised to share the skills they hone on campus with the local community.

First Friday event will feature great live entertainment, a variety of art vendors lining the streets, fun and interactive art projects, and stimulating events. Putnam is a hub for arts & culture in Northeast Connecticut.

The Fourth of July festivities continue this week with the town of Enfield Ct bringing up another big weekend full of events. They will feature some big time musical acts such as the two Concerts on Friday  that feature The Robert Cray Band followed up by John Hiatt.  Once again on Saturday, There will be more live shows that will feature New England favorites The Savage Brothers, followed up by The Marshall Tucker Band, and the final show of the night will be  Dickey Betts and Great Southern. In addition to the live music shows, Enfield traditionally throws a very large celebration for the Fourth and the schedule of activities for this year looks like a fun filled Fourth.

It is Tuesday morning and its early, as soon as I awoke I put on a pot of coffee and waited to hear the sounds of a new day. It is that peaceful time when the transition to the day has not yet started; perhaps that's why the first cup of coffee is always the one I enjoy the best.  

I have already read the morning news and now I am waiting for the birds and their morning chorus to the world. Wake up you early risers. Got ready to go and when I look at the clock it’s only 4:30 am. I must really miss the road after the extra long weekend.

This morning, the Frau and I were having breakfast and decided to make a day trip of it. I was fortunate enough to have a long Holiday weekend. There is seldom enough rest for the weary but when the opportunity arises, we go for it. The picnic cooler was packed and the road trip was underway. We headed west and the adventure today was on.

The first stop of the day was at Stanley Park in Westfield Ma. This is one of the nicest parks in Western Mass. It was a warm day with a slight breeze so we were able to take a good long walk around the grounds and enjoy the sights. We saw most all of the gardens and considered ourselves lucky because visiting a garden is always about timing. The rose garden area with all the different daylilies was just perfect. They are all gearing up and blooming. It was very enjoyable.

 After, we sat down at the picnic tables and enjoyed our lunch. Turkey sandwiches that were tasty, but I did have to mention to Helene that with all the walking we did today, I had hoped it was going to be the size of a deli sandwich.


Next stop on the road trip was to the Westfield River above the Knightville Dam. This is the part of the river that is downstream from Chesterfield Gorge. It’s a place where we have swam and fished for many, many years. The fishing is catch and release, artificial lures only, but there are a few pools that are in the stretch above the gate that hold some big brown trout. There are also Rainbow and Brook trout a plenty here. I do believe that they had all left those nice pools last week, its vacation week you know!

There is a passage from Norman McClean’s novel, A River Runs Through It, that I have never forgotten, ‘I’m haunted by waters.' The day I read those words, I fully understood the meaning and what those places do for me.
We then decided that we were close enough for a trip over to Glendale Falls. Last year, in the fall the trustees built a new walking path that will bring you down to the bottom pool of the falls.  Well the new path makes that trip down to the bottom a whole lot easier and we did think about jumping in for a dip.  After we enjoyed the trip there it was time to head back to the city and get ready for Tuesday.

I will be back on the road to my normal schedule tomorrow; I think its VT and NH. I hope you all had a great weekend as well.

            At times. Mondays go very slow, and can be painful.

Helene and I were invited by Bill and Andrea to attend their annual 4th of July party yesterday. As they have done so many times before, they proved to be wonderful hosts and bring a group of their close family and friends together for a fun day.

The rain from Tropical Storm Arthur came as expected in the afternoon, but there were plenty of tents set up to keep everyone dry. We did not have the severe winds here in Western Ma so with plenty of cover, the party was on. There was more than enough food and drink to keep an army of people smiling. The Tiki Hut Bar in the back yard kept the music playing and the guest settled into enjoy a relaxing time with good conversation.

It was amazing to see the children of guests that were there who we have not seen since last year’s party and how quickly they are growing up. Yes, life does go by way to fast.  When there was a break in the weather and the rain stopped for a little while, there were some brave souls that jumped into the pool and have some fun.

  It always seems impossible for me to remember everyone’s names but, everyone was friendly and the smiles on every face told what a great time was being had by all. The Beer was cool like the weather and the only thing that got toasted were the hot dogs.

 I hope that everyone has a great weekend and you are able to get out and enjoy life. Weather report says that were back to sunshine today, fireworks in the evening and good times for the rest of the weekend.

           The Rain Delay is over and the countdown for tonight's fireworks show is on.

The end of the Cyclone

Six Flags New England has announced that they will be retiring the infamous wooden roller coaster, Cyclone on Sunday, July 20. This classic wooden roller coaster is not only an instantly recognizable landmark; it has been thrilling riders since the days when the park was operated by Riverside Park over three decades ago.

As one of the largest wooden coasters in the world, the amazing wooden architecture takes the rider on a wild ride on over 3,600 feet of track. But before you go anywhere you’ll first have to climb up to 112 feet. Brace yourself to fly down one of the steepest lifts on any wooden coaster, slicing through a narrow-tracked series of hills and slopes, shooting down the track at 55 miles per hour.

I remember riding it years ago. The click-clack-click-clack as we started the climb up the first hill. The hard jolting turns when you’d come up and out of your seat and was grateful to have the lap bar and no neck injury's. Yes it’s the end of an era. New Roller coasters can go twice as fast, (Kingda Ka – Six Flags Great Adventure, New Jersey) travels up to 128 mph. New coasters also use hydraulics or compressed air to propel the rider into a super ride. That click-clack-click-clack will very soon, be just another memory.
